Try skirt steak with watercress and chilies

Preheat a grill to towering (preferably, build a charcoal fire and let the coals turn pale gray) or stimulate a cast-iron griddle over high heat. Let the grates or griddle get movables and hot. Whisk together the lime zest, juice, extra virgin olive oil, mustard, garlic, and sea relish in a small bowl. Set the dressing aside for the moment.

Rub both sides of the steak with a bounteous drizzle of oil, then generously season all over with the kosher salt. As has been mentioned repeatedly by others, the grid is high, undivided, gives good results, and the congregation was not dark.
